FullyRaw Pumpkin Pie: Filling
Think Cheese Cake meets Pumpkin Pie…
- 2 Cups Shredded Curry Pumpkin -I chose this variety of pumpkin because it is one of the sweetest:)
- 1.5 Cups Dates
- 1 Cup Cashews (soaked-refer to soaking chart)
- 1 Lemon
- 2 tsp Cinnamon
- 5 Cloves (finely ground)
- 1/2 tsp Vanilla Powder
- 1/4 tsp Nutmeg
- Add 2 Cups Shredded Curry Pumpkin and spices to food processor. Blend until smooth. Place in mixing bowl.
- Add Cashews and juice of 1 lemon to food processor. Blend until smooth. Place in mixing bowl with Pumpkin.
- Add Dates (pitted) in food processor. Blend until smooth.
- Combine all ingredients together in food processor. Blend until Smooth.
