FullyRaw Pumpkin Pie: Filling

Think Cheese Cake meets Pumpkin Pie…

Organic Ingredients:

  • 2 Cups Shredded Curry Pumpkin -I chose this variety of pumpkin because it is one of the sweetest:)
  • 1.5 Cups Dates
  • 1 Cup Cashews (soaked-refer to soaking chart)
  • 1 Lemon
  • 2 tsp Cinnamon
  • 5 Cloves (finely ground)
  • 1/2 tsp Vanilla Powder
  • 1/4 tsp Nutmeg

Directions

  1. Add 2 Cups Shredded Curry Pumpkin and spices to food processor. Blend until smooth. Place in mixing bowl.
  2. Add Cashews and juice of 1 lemon to food processor. Blend until smooth. Place in mixing bowl with Pumpkin.
  3. Add Dates (pitted) in food processor. Blend until smooth.
  4. Combine all ingredients together in food processor. Blend until Smooth.
